What exactly is on the covers of UYI I and II?

Mark Kostabi's painting called "Use Your Illusions".

I guess it's a remake of this painting.

I've never seen the full painting-or knew the covers were only a portion of the whole thing.

It's a pretty elaborate piece of work.
