that's the job of a stuntman.  to make you believe it was the performer doing it all.  just like in the movies

The dolphin represents Inner Peace and Axl chasin the dolphin symbolizes him chasing it, and when he catches it and is with the dolphin at the end, that means he found his peace.


Jumpin off the ship is basically killing off his old self and tryin to evolve and change into a better version hence the AXL Converse  at the end, just meant he is leaving his old ways behind.


Great thing about GNR is, u have to use your mind to understand it, its not literal.
